Colocasia is rich in protein, iron, potassium, vitamin C, and vitamin B6. This delicious dry Arbi Sabzi preparation is tossed with beaten rice and spices.

2.5 cups of colocasia thick roundels, ½ cup thick beaten rice, 2 dry Kashmiri red chiles, 1,4 tsp asafoetida, ½ tsp turmeric powder, 2 tbsp oil, 1 tsp mustard seeds, salt to taste
1. In a blender, add thick beaten rice, dry red chiles, asafoetida, and turmeric powder. Blend and keep this powder aside.
2. In a kadai, add oil. Once warm, add mustard seeds. Once the seeds splutter, add the colocasia, salt, and ground beaten rice powder.
3. Stir occasionally and cook on a medium flame for about 10 minutes.
Hot and tasty Arbi Sabzi is ready to relish with hot phulkas. Enjoy!
