Beans Load

A quick and tasty South Indian dish made with French beans and grated coconut. Beans Load as a dish is a great way to add iron rich beans in your diet. You can have it with rice or if made dry, then as finger foods.

    Ingredients to make Beans Load:

    150 gms french beans, 1 tbsp oil, 3/4 tsp mustard seeds, 3/4 tsp urad dal, a pinch of asafoetida, 1 spring of curry leaves, grated coconut, 1⁄2 cup water, salt as required

    Steps to make Beans Load:

    1. Rinse the french beans properly and drain them. Remove the side strings from the beans and then chop them diagonally.

    2. Heat oil in a pan, add mustard seeds and urad dal. Let the seeds splutter and fry dal until red.

    3. Add asafoetida, turmeric powder, curry leaves,. Mix well.

    4. Now add the french beans, saute for a minute and then add 1⁄2 cup of water along with salt.

    5. Cover and cook till the french beans are tender and done. Add water in between if required.

    6. Add the grated coconut.

    Serve the Beans Load with sambhar and rice.
