Beet Apple Jelly

You can give the taste of summer all year long with this super healthy recipe. Beetroot are a great source of fiber, folate, manganese and potassium.

    Ingredients to make Beet Apple Jelly:

    2 cups washed, peeled and cubed beets, 1½ tbsp.lemon juice, 4 tbsp. coconut sugar crystals, 2 cups water, 2 tsp. agar agar powder, 1 apple washed, pitted and diced into small pieces and ½ tsp.salt (for soaking apples to prevent from oxidation).

    Steps to make Beet Apple Jelly:

    1. Pressure cook beets until soft and cooked or for 25 minutes.

    2. Soak the apple pieces in salted water for 5 minutes and remove and keep it aside covering it.

    3. Blend the cooked beets with water and strain the mixture. Add agar-agar powder in ½ cup warm water and stir until it dissolves.

    Serve fresh.
