Beetroot poriyal is a dish from Kerala and is a tasty side dish that can go with rice and sambar. This dish is also highly nutritious as it is made from beetroots, which are a rich source of copper, manganese, potassium, dietary fibre, magnesium, phosphorus, Vitamin C, iron and Vitamin B6.

Ingredients: 3-4 beetroots grated, 1 green chilli chopped, ¾ tsp black mustard seeds, ¾ tsp urad dal, a pinch of hing, 10-12 curry leaves, 4 tbsp. grated coconut, 1 ½ tbsp. oil, salt.
Steps:
1. Heat oil in a pan and splutter the mustard seeds. Add the urad dal and sauté till they are golden.
2. Add the chopped green chillies, curry leaves and hing and sauté for a minute.
3. Add the grated beetroot into the pan, sprinkle salt, mix well and close the lid of the pan to let the beetroot cook.
4. When the beetroot is done, sprinkle the grated coconut and stir well.
