Racking your brains for a ways to make veggies more interesting? No worries – we have the perfect recipe for for you. Capsicums are rich in Vitamin C, Vitamin B6 and magnesium.

Ingredients: 4 to 5 medium to large capsicums (shimla mirch), 5 medium potatoes- boiled and grated, ½ cup boiled peas, 1 small onion, ½ teaspoon cumin, ¼ teaspoon turmeric powder, ½ teaspoon dry mango powder, ¼ to ½ teaspoon garam masala, 2 teaspoon chopped coriander leaves, 2 tablespoon oil, salt to taste
Steps:
1. Slice off the tops of the capsicums and remove the seeds.
2. Heat oil. Add the cumin, chopped onions, turmeric powder and sauté. Add the potatoes with garam masala powder, dry mango powder and salt.
3. Add chopped coriander leaves, mix and cool mixture.
4. Stuff the potato mixture in the capsicum. Brush the outside with oil and bake in a preheated oven at 200 degrees C for 20 to 30 mins till the capsicum has become golden and wrinkled. Serve hot.
