The delightful combination of brinjal, onion, and tomatoes with spices has a mouth-watering flavour. You will definitely love brinjal in this form. Brinjals are rich in antioxidants and help in boosting immunity.

250 gm brinjal, 2 medium sized tomatoes chopped, 1 large onion chopped, 1 tsp cumin seeds, 1 tbsp coriander powder, 1 tsp turmeric powder, 3-4 tbsp mustard oil, salt to taste, 1 tsp red chilli powder, 4-5 garlic cloves chopped, ½ tsp garam masala, a pinch of asafoetida, 1 tbsp amchoor powder
1. Heat oil in a kadai; add cumin seeds and let them splutter. Add asafoetida and garlic. Saute for a minute.
2. Add onions and fry for 2-3 minutes. Add in tomatoes and mix well.
3. Now add turmeric powder, coriander powder, red chilli powder and fry the masala till it starts leaving the sides of kadai.
4. Now add brinjal slices. Toss on medium flame till they are cooked, cover and cook till soft on medium low flame.
5. Add garam masala, amchoor powder and mix well.
Serve it with rice and chapati.
