Candied Yam Cupcakes

These are the sweet treat for those who have a sweet tooth. It is easy to make and has a very delicious flavor that keeps you wanting it more.

Ingredients to make Candied Yam Cupcakes:

3 cups yam peeled and cubed, 4 eggs, 1 cup canola oil, 1 cup white sugar, 1 tsp vanilla extract, 2 cups maida, 2 tsp baking powder, 1 tsp baking soda, 2 tsp cinnamon powder, 1 tsp salt, 6 tbsp cream cheese, ½ cup butter, 1 tsp vanilla extract, 2 cups confectioner’s sugar.

Steps to make Candied Yam Cupcakes:

1. Place a steamer on the gas and bring water to a boil. Now place yams on a plate placed over the steamer and then steam them until they are tender. Steam them for 15 minutes and then remove from the steamer and allow to cool.

2. Preheat oven for 350 degrees and line up 2-12 cupcake tins with paper liners.

3. Place eggs, oil, sugar, vanilla extract and cooked yams in a large bowl.

4. Beat with a beater until it becomes light and fluffy. Sift together flour, baking powder, baking soda, cinnamon and salt.

5. Mix yams pieces into the mixture and pour the batter into the cups.

6. Bake in preheated oven for 17-20 minutes. Take out on a tray and let it cool down.

7. Now beat together cream cheese and butter and vanilla extract and confectioner’s sugar. Mix until fluffy and smooth.

Add on the top of cupcakes and keep them in the fridge till the top layer gets frosted.
