Carrot Cookie Bites are a healthy snack for your little one. You can prepare in advance and take it on trips with your little one. Carrot is very good for your little one and helps to prevent loose stools and is rich in proteins and vitamins.

Ingredients to make Carrot Cookie Bites:
1 cup packed brown sugar, 2 large eggs, ½ cup buttermilk, 1 teaspoon vanilla extract, 2 cups all-purpose flour, 1 teaspoon ground cinnamon, ½ teaspoon salt, 1/4 teaspoon baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, 2 cups quick-cooking oats, 1 cup shredded carrots, ½ cup chopped pecans, ½ cup butter
Steps to make Carrot Cookie Bites:
1. In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the eggs, buttermilk and vanilla. Combine the flour, cinnamon, salt, baking powder, baking soda, nutmeg and cloves; gradually add to creamed mixture. Stir in the oats, carrots, and pecans.
2. Drop ladle full of the mixture on to ungreased baking sheet and bake for 6 to 8 minutes.
Cool and store in containers.
