Carrots are a popular snack and good addition to soups and stews. Most of the benefits of carrots can be attributed to their beta-carotene and fiber content. These root vegetables are also a good source of antioxidants. Make sure you include carrots daily in your diet and prepare this dish today.

Carrots, oil, curry leaves, peanut powder, water
1. Pressure cook the carrot for 10-15 minutes. Roughly mash it and keep aside.
2. In 1 spoon of oil add curry leaves and peanut powder, saute for few minutes.
3. Add mashed carrot, mix well
Serve hot.
