Want to learn a new and nutritious recipe using rice? Try out our recipe for Cheesy Pepper Rice, full of the goodness of carbohydrates, Vitamin C, Vitamin A, and other essential nutrients.

For the Rice: 3 tbsp oil, 1 1/2 cups uncooked rice, salt to taste. Other Ingredients: 2 tbsp oil, 1/2 cup thinly sliced capsicum (red, green, yellow), salt to taste, 2 tbsp grated processed cheese
1. Wash and soak the rice for 30 minutes and drain well.
2. Heat the oil in a kadhai, add the rice and sauté on a medium flame for 2 to 3 minutes.
3. Add 3 cups of hot water and salt, mix well and cook on a medium flame for 8 to 10 minutes or till the rice is cooked, while stirring occasionally. Drain out any excess water if remaining.
4. Heat the oil in a kadhai, add the capsicum and sauté for 2 to 3 minutes.
5. Add the cooked rice and salt and cook for 2 minutes.
6. Add the cheese, mix well and cook for 1 more minute. Serve immediately.
