Cheppi Kheeri is a Konkani rice dish cooked with turmeric leaves and coconut milk. You will enjoy this flavourful, delicious, and special dish. This dish has loads of flavour in it. Turmeric leaves have dietary minerals, essential oils, and curcuminoids.

1 cup rice, 1½ cups fresh grated coconut, 2 fresh green turmeric leaves.
1. Cook rice as usual, mushy rice is better.
2. Extract coconut milk from grated coconut and add to the cooked rice and bring it to boil on a medium flame.
3. Wash the turmeric leaves well, tie the leaf into knots and add them to the cooking kheeri.
4. Keep stirring and once the kheeri comes to a boil and the coconut milk has combined well with the cooked rice, allow it to simmer for a minute or two and remove from heat. Kheeri should be a little watery.
Serve it with a pinch of salt and cucumbers in spicy coconut chutney.
