This Chicken Fried Rice is a great quick dinner when you want to use up the leftover veggies in the fridge. It tastes delicious with soft tender chunks of chicken. Chicken provides a good supply of protein, essential vitamins, and minerals. It has lots of amino acids that helps to grow taller and stronger.

2 tbsp oil,2 cups cooked rice,200g of cooked chicken cut in cubes, ½ teaspoon fresh minced ginger, 1 garlic clove minced, ¼ cup diced onion, 1½ cup frozen peas and carrots, 2 eggs beaten, 1-3 tbsp soy sauce to taste, 2 finely chopped spring onions
1. In a medium bowl, whisk together the eggs and 1 teaspoon of the soy sauce.
2. In a large nonstick skillet, heat oil over medium-high. Add egg mixture; stir gently until set. Remove egg and cool slightly. Cut egg into strips and set aside.
3. In the same skillet, heat oil over medium-high. Add onions, carrots, peas and, and cook 2 minutes.
4. Add chicken, cook and stir until chicken is no longer pink, about 3 minutes.
5. Then mix in rice and remaining soy sauce; cook and stir for 2 to 4 minutes or until heated through.
6. Add egg mixture and green onion. Cook and stir for 2 minutes more.
Serve warm and relish.
