Chicken Shots are perfect as finger food, this is a great way to combine chicken and veggies into little bite sized balls that look cute and are yummy as well. Coconut milk enhance the taste adds the rich flavour of the coconut. These ingredients have a good source of antioxidants, vitamin A and C, both soluble and insoluble fiber, manganese, vitamin E, zinc and protein.

1 chicken breasts (ground), 1 boiled and mashed carrots, ½ cup breadcrumbs, ½ tsp cumin powder, salt and pepper to taste, ½ cup coconut milk, 1 tbsp chopped coriander leaves.
1. In a large bowl, place all of the ingredients except for coconut milk. Gently fold together with your hands everything is well mixed. Let it rest, while you pre-heat the oven to 450 degree F.
2. Roll the meat mixture into 1 inch balls and place them on the greased baking tray.
3. Bake for 10 to 12 minutes or until the chicken shots are cooked through and gently browned.
4. Cook the coconut milk for a few minutes, season it with salt and pepper.
5. Soak a few of chicken shots in coconut milk.
Offer both the dry chicken shots and soaked ones to your evening snacks today.
