If your kid is fond of mango, here is another simple and deliciously quenching recipe to delight him. This is a two-layered jelly. Mango is rich in vitamin C and E, while coconut milk has good source of vitamins and minerals.
For mango layer:
1½ tsp. agar agar powder, 1½ cups water, 2 cups mango juice, ½ cup sugar, 1 tsp. lemon juice
For coconut layer:
¾ cup thick coconut milk, ¾ cup water, ½ sugar , 1 tsp. agar agar powder.
For mango layer:
1. Soak agar agar powder in 1 cup water for 10 minutes. Heat until the agar agar is melted and keep aside.
2. Mix sugar and water in a saucepan and melt on a low heat stirring occasionally till sugar is melted.
3. Add in mango juice and mix well. Add agar agar mixture and lemon juice and mix well. Pour this in flat bottomed tray and cool and place in the fridge to quicken the setting.
For coconut layer:
1. Heat the soaked agar agar powder and water till it is melted completely.
2. Mix sugar in ¼ cup water and heat till the sugar melts down. Now add in coconut milk and mix well.
3. Add the agar agar liquid and mix well.
4. Pour this over the mango layer and keep in the fridge to set.
Unmould the jelly and cut into cubes and serve to your child.
