A colourful salad is the best way to eat a lot of veggies at the same time! This multi-coloured Corn and Bell Pepper Salad ensures that you get all the vitamins, minerals, phytochemicals, antioxidants and nutrients provided by bell peppers and corn, to grow and thrive.
2 cups sweet corn kernels, 1 red bell pepper, 1 yellow bell pepper, 1 green bell pepper, 1 cucumber, 1 lime, olive oil, salt, fresh ground black pepper
1. Bring water to boil in a large pan and add sweet corn kernels into it. Allow it to cook for 5 minutes.
2. Once the corn becomes soft, drain the water.
3. Finely chop red, green and yellow bell peppers and cucumber.
4. Mix all the veggies in a large bowl.
5. Pour a spoon of olive oil and lemon juice over top and gently toss to coat.
6. Add salt and pepper according to taste. Cover and refrigerate for an hour before serving.
Make this more colourful and tasty recipe by adding carrot, lettuce, zucchini and other vegetables of your choice.
