Corn kernels are used in salads, soups, sandwiches and a lot of other dishes. Here’s a recipe that allows you to make a nutritious and delicious snack at home. Corn is a rich source of carbohydrates, protein, iron, Vitamin B6 and magnesium.

Ingredients: 1 corn cob steamed and kernels removed, ½ tsp chilli powder, ½ tsp. chaat masala, 4 tsp. chopped coriander leaves, 1 tsp chopped ginger, 1 tsp. lime juice, salt, 2 potatoes, boiled and mashed; 1 ½ tbsp. rice flour, ¼ tsp. chilli powder, ¼ tsp. each of cumin and coriander powder, salt and oil.
Steps:
1. In a bowl, mix the corn kernels, chopped ginger, green chillies, coriander leaves, chaat masala, chilli powder, lime juice and salt.
2. In another bowl, mix the mashed potatoes with rice flour, coriander and cumin powders, chilli powder and salt. Mix well and knead into a dough. Pinch out small balls from this dough and stuff them with the corn filling.
3. Flatten them into patties and fry in oil till they are crisp and golden.
