This is an instant vada preparation without soaking any dals. All you have to do is boil potatoes and the corns while preparing lunch and store them to use in the evening. Corns have good dietary fiber and rich in protein and antioxidants. Believe us, you will enjoy munching these Crispy Corn Vadas.

1 cup boiled corn kernels, ½ tsp chaat masala, 2 tbsp chopped coriander leaves, 1 tsp lime juice, salt to taste, 1 big boiled and mashed potato, 3 tbsp rice flour, oil for frying, 5 pudina leaves and curry leaves, ½ tsp of red chilli powder, cumin powder, cinnamon powder, fennel powder
1. Add all the ingredients in a big mixing bowl and mix everything well.
2. Make even size balls from the mixture.
3. Heat oil in a pan for deep frying.
4. Flatten the balls gently on a greased banana leaf, betel leaf or grease proof paper.
5. Drop gently 3 to 4 vadas gently into the oil and fry them for 1 to 2 minutes without disturbing and then flip them and fry until golden and crisp.
Serve these aromatic vadas either with coconut chutney or plain. Isn’t this simple and easy to attempt for today’s evening snack?
