Eggplant Kadhi

Kadhi is a very common dish in the menu platter of any North Indian home. It is a comfort food as well and you would love it. It is full of aroma, texture and health. It helps in cases of iron defiiency, lifts mood and apetite.



    Ingredients to make Eggplant Kadhi:

    1 brinjal, 1/2 cup besan, 1 cup curd, 1/2 tsp coriender powder, salt to taste, 1/2 tsp turmeric powder 2 tbsp oil, 1/4 tsp mustard seeds, 2 glass water

    Steps to make Eggplant Kadhi:

    1. In a big bowl, add yogurt, besan, turmeric powder, salt, 2 and half cups of water, mix all together properly. Make sure that there are no lumps. Keep aside.

    2. Heat oil in a pan, add mustard seed, and turmeric leaves. Stir for few seconds.

    3. Now add brinjals, sauté them for 2 to 3 minutes, add yogurt and besan mixture. Stir continuously until kadhi starts boiling.

    4. Continue to simmer for 4 to 5 minutes.

    Garnish with chopped coriander leaves and serve hot with rice or chapati. Enjoy!
