Gaja is a perfect Bengali sweet delight that can impress anyone. You make this snack with minimal efforts and time. Saunf is a good source of vitamin C and dietary fiber.

½ cup maida, 2 tbsp. ghee, ¾ cup sugar, ½ tsp. baking soda, ¼ tsp. saunf powder, oil for deep frying, ¼ cup water
1. Sieve maida and baking soda together for 2 times to remove any lumps in dry ingredients.
2. Combine maida, baking powder, saunf, ghee in a mixing bowl and rub all the ingredients until it makes crumbly flour.
3. Use water little by little to make soft dough to be rolled easily. Cover with a damp muslin cloth and keep it aside for 10 minutes.
4. Divide the dough into small lemon size balls and roll into chapatti and fold in zig zag shape which looks more like a tongue.
5. Heat oil in a frying pan and deep fry them over medium flame until they are golden brown in colour. Drain them in kitchen towel and keep aside.
6. Prepare sugar syrup by boiling sugar and water till you get a thread like consistency.
7. When the sugar syrup cools down a little drop the gajas into the syrup and let it soak for 5 minutes
8. Remove the gajas from the sugar syrup and as they cool down a white crystal layer of sugar syrup would be formed on the gajas.
Serve this delicious sweet as a snack and also stay energized all day!
