This delicious Gajorer Payesh is a great way to incorporate carrots in your diet! It’s loaded with carotene, vitamin A, protein, and calcium.

Grated carrot – 1 cup, basmati rice–1 tbsp, milk–4 cups, sugar – 4 tbsp, jaggery–1 big piece grated, milk powder–3 tbsp, crushed cashew nuts–2 tsp, ghee–2 tsp, green cardamom–2-3
1. Soak the rice in water for 10-15 minutes. Drain, crush partially and keep aside.
2. Heat ghee in a pan and lightly fry the grated carrot. Keep aside.
3. In a deep bottomed pan boil the milk with green cardamom.
4. When it reduces to 2/3 of its volume, add crushed rice, jaggery, and sugar. Cook for 7-8 min, stirring continuously.
5. Add sautéed carrot and mix well. Keep stirring continuously till the milk is reduced by half.
6. Add milk powder and cook for 2-3 minutes. Add cashew nuts and remove from heat. Cool and serve.
