Gobi 65

Gobi 65 is delicious, crunchy and healthy. Fresh cauliflowers are readily available in the market during the winters. They are rich in potassium, sodium, Vitamin C, calcium, iron, Vitamin B6, magnesium and dietary fibre. Here’s an easy recipe that will allow you to make Gobi 65 easily at home.

    Ingredients: 3 cups medium cauliflower florets, hot water, 7 dry red chillies, 2 tsp chopped garlic, 2 tsp chopped ginger, 6 tbsp besan, 4 tbsp rice flour, 2 tbsp corn starch, ¼ tsp turmeric powder, ½ tsp each of chilli, garam masala and coriander powder, ½ tsp lemon juice, ½ tsp mustard seeds, ¼ cup of chopped spring onion whites, 3-4 green chillies slit, 5-6 curry leaves, 1 tbsp chopped coriander leaves, sugar, salt, oil and water. 

    Steps:

     1. Soak 4 dry red chillies in water for about 15 minutes. 

     2. Meanwhile rinse the cauliflower florets and blanch them in hot water for about 20 minutes.

     3. Drain the water from the red chillies. Put them in a mixer jar along with chopped 1.5 tsp each of garlic and ginger and blend them into a smooth paste. Set aside.

     4. Drain the water from the cauliflower florets and take them in a mixing bowl. Add the red chilli paste and mix well so that all the florets are completely coated with the paste. 

     5. Add besan, rice flour cornstarch and the spice powders and salt to the florets and mix well. Add lemon juice and enough water to make a smooth paste that covers the florets. Set aside for half an hour. 

     6. After half an hour, heat some oil in a pan and fry the florets till they are crisp and golden. Set aside. 

     7. Heat oil in a pan and splutter the mustard seeds. Add the chopped onions and green chillies and sauté till the onions turn golden in colour. Add the remaining chopped garlic and ginger along with salt and curry leaves. Add the fried cauliflower florets. Saute for a few minutes, add coriander leaves and remove from the flame. 

    Gobi 65 is ready! It can be served as snacks with tomato ketchup or eaten with chappatis. So try making Gobi 65 at home today!
