Gokul Pithe

A delicacy of Bengal, Pithe is packed with minerals and vitamins and is a seasonal delight. But you can make it any time of the day if you crave a healthy dessert.

    Ingredients to make Gokul Pithe:

    For the filling:

    1½ cup sugar, water as required, ½ tsp. green cardamom powder, ½ cup khoya (mawa), 1 cup dessicated coconut Steps to make Gokul Pithe:

    For the filling:

    1. Take a heavy bottomed pan; add sugar and just enough water to soak the sugar.

    2. Keep stirring constantly until the sugar dissolves and begins to boil. When there is thread like consistency add the dessicated coconut while stirring continuously.

    3. When the mixture balls up without sticking to the sides, add the khoya, and stir continuously on medium-low flame.

    4. When khoya is mixed completely increase the flame to medium and stir constantly for 1-2 mins. Add cardamom powder, mix well and switch off the flame and cool the mixture

    5. When the mixture is cool enough make small balls and keep them in a plate.

    For the outer crust:

    Ingredients:

    1 cup Maida, 2 tbsp. semolina, a pinch of salt, 2 tbsp. ghee, milk as required, oil for deep fry

    Steps to make Gokul Pithe:

    1. Sieve and sift both maida and semolina and combine a pinch of salt and mix well.

    2. Add milk little by little and prepare smooth batter to coat the back of the spoon.

    3. Heat oil with ghee in a frying pan.

    4. Dip the coconut balls in the batter and coat well from all the sides.

    5. Gently drop them in hot oil and reduce the flame to medium and fry them until they are golden brown and drain them on tissue paper to remove excess oil.

    Ingredients to make Sugar Syrup:

    1 cup sugar, 1½ cup water and 2 drops rose essence and 1 tsp. lemon juice

    Steps to make Sugar Syrup:

    1. Prepare the sugar syrup by boiling sugar and water while stirring continuously.

    2. When the syrup reaches one string consistency add rose essence and drop the fried gokul pithe in the hot bubbling syrup and switch off the flame

    3. Just wait for 1 minute and remove from the syrup.(do not allow to sit or soak up all the syrup.)

    Serve the awesome Gokul Pithe hot and juicy!
