Another tasty rice preparation is Golden Fried Rice. A quick, easy and healthy rice preparation that tastes yum and has all the vital nutrients needed for growth. Rice has carbohydrates while veggies like onion, capsicum and corn are rich in vitamin and minerals. Both rice and the veggies are flavoured with garlic and mint leaves in little olive oil and the resultant rice tastes superb.

½ cup uncooked rice, ¼ cup sweet corn, ¼ cup onion, ¼ cup capsicum. 3-5 mint leaves, 2 tsp olive oil, 2-3 garlic, 1 cup water
1. Take ½ cup uncooked rice. Wash and soak for 15 minutes.
2. In a kadai, add water. Once the water comes to a boil, add mint leaves, 1 tsp olive oil. Give a stir. Add the drained soaked rice.
3. Bring the water to a boil. Simmer and cook the rice for another 10 minutes. Please ensure the rice grains don’t break.
4. Allow the rice to cool down.
5. In the same kadai, add remaining oil. Add the finely chopped garlic and saute well for 2 minutes.
6. Add the chopped onion, capsicum and sweet corn. Saute well till they turn tender.
7. Mash the veggies slightly. Add the cooled rice and give a good stir on medium flame for a minute.
