Spinach is rich in minerals like iron, calcium, potassium and vitamins like A and K. Its also a good source of dietary fibre. Along with rice, onion and potato, you can prepare nutritious green rice. Rice and potato are good source of carbohydrates. The green rice is flavoured with ginger and garlic, mint leaves and lemon juice, all which have vital vitamin and minerals. All in all, this rice preparation has the goodness and richness of vital vitamin and minerals.

1 cup rice, ½ cup spinach, 1 potato, ¼ onion, 1 bay leaf, 3-4 mint leaves, 1 tsp lemon juice, salt as required (less than 1 gram of salt a day), 1 tsp oil, 2 cups water
1. Wash the rice and drain the water. Keep the rice aside.
2. In a pressure pan, add oil. Add bayleaf.
3. Add the chopped onion and saute for 2 minutes. Add the potato cubes and mix for 2-3 minutes.
4. Add the chopped spinach and cook for about 5 minutes.
5. Add the rice, salt and give a good mix.
6. Add water and mint leaves. Stir well.
7. Pressure cook for 2 whistles. Once the steam gets cooled, take out the rice on a plate.
8. Sprinkle lemon juice and give gently mix.
Tasty Green Rice is ready to enjoy.
