Hara Bhara Saag is the best option to include greens in your diet. Plus the goodness of mushrooms in it not only provides nutrients but also enhances taste. Mushroom and spinach are rich in vitamin D and iron.

1 bunch of spinach leaves, 1 packet button mushrooms, 1 onion pureed, 1 tomato pureed, 2 green cardamoms, 2 cloves, 1 tbsp cumin seeds, 1 tbsp cinnamon powder, oil, cream and salt as per taste
1. Wash the spinach leaves properly and blanch them in hot water.
2. Blend the leaves to a fine puree using mixer.
3. Bring 3-4 cups of water to boil, add 1 tbsp salt and diced mushrooms. Blanch mushrooms.
4. Heat 2 tbsp oil in a kadai and add cumin seeds. When the seeds splutter, add green cardamom, cinnamon, cloves. Fry for half minute on medium flame.
5. Add onion puree and fry till it turns golden brown. Add tomato puree then.
6. Cook the onion tomato puree till it leaves the oil from sides. Add salt.
7. Once done, add spinach puree and mix properly with the paste.
8. Add blanched mushrooms and mix properly. Cook on a medium flame while stirring in between. Add 4 tbsp cream and mix well.
9. Cook for another 2 minutes and switch off the flame then.
Serve this creamy Hara Bhara Saag. You can puree mushrooms as well.
