Jaggery rice is a Pakistani dish which uses jaggery and rice. It is very easy to prepare and is highly nutritious because of it uses rice, which is a rich source of potassium, carbohydrate, dietary fiber, protein, iron, Vitamin B6 and magnesium.

Ingredients: ¾ cup rice soaked in water for half an hour, 120 gms jaggery, 1 ½ tbsp. oil, 1 ½ cups water, 4 small cardamoms, 4 cloves, 15-20 raisins, 1 bay leaf, 1 tbsp. roasted peanuts.
Steps:
1. Soak the jaggery in ¾ cup of water and later crush to completely dissolve it in water.
2. Drain the rice and half cook in a pressure cooker. Remove the lid and fluff it.
3. Add the jaggery solution, cardamoms, cloves, raisins, bay leaf and peanuts into the cooker and cook again till the rice is done.
4. Remove from the cooker, garnish with a few chopped dry fruits of your choice and serve.
Jaggery rice is an excellent alternative to ordinary rice.
