Poha: 250 gms, Potato - 1 chopped, Cashews – ½ cup roasted, Urad Dal - 2 tsp, Hing - 1/4th tsp, Turmeric Powder - 1/2 tsp, Mustard seeds - 1 tsp, Ginger - 1/2 tsp chopped, Curry Leaves - 5 to 6, Salt to taste
1. Wash and drain the poha. Add salt and finely chopped ginger. Mix well and set aside.
2. Heat oil and add the mustard seeds. Let it splutter and then add the urad dal. When it turns light golden add hing, turmeric powder and chopped potatoes & sauté for a few mins.
3. Add the curry leaves & cashews. Saute just for a few seconds.
4. Add the beaten rice & mix well. Sauté for a few minutes and serve.
This tasty Kaju Pohe is definitely going to make you feel very happy!
