This is good way of using the fibers of watermelon rind. This is a super healthy recipe. Watermelon rind is nutrient rich in chlorophyll. Ghol leaves contain high amounts of omega-3 fatty acids, zinc, and calcium.

¾ cup grated watermelon rind, 1 cup rice, salt to taste, 1 tsp. oil
1. Wash and soak rice for 2 hours.
2. Drain and grind watermelon rind along with rice, without adding any water. Add salt and ferment overnight.
3. Heat the pan, grease oil, and pour a ladle of the batter. Spread it to make a pan cake.
4. Grease oil on the sides of the pancake. Flip and cook the other side.
Serve hot Kalingad Pole along with chutney.
