Konhda is a dish made from pumpkin. It’s popular in Bihar and goes well with rice. Pumpkin is very good for health. It contains vitamin A, fiber, and potassium, all of which support the heart.

Ingredients to make Konhda:
500 grams green konhda/unripe pumpkin, a pinch of hing, 1 teaspoon panch phoran, 2 green chili chopped, ½ teaspoon turmeric powder, 1 teaspoon coriander powder, 1 teaspoon fennel seeds powder, ½ teaspoon amchoor powder, 2 tablespoon mustard oil, salt to taste.
Steps to make Kohnda:
1. Wash and cut the kohnda into medium size pieces.
2. Heat oil in a kadai.
3. Add hing and panch phoran.
4. When phoran crackles , add kohnda pieces, haldi and salt.
5. Keep stirring till water gets absorbed in the kadai.
6. Reduce heat . add red chilly powder, green chili, saunf, and amchoor powder.
7. Mix well and cook covered in kadai till all liquid dries up.
Serve hot.
