    Ingredients to make Kothavarangai Vathal:

    1 kg small cluster beans, 1 tbsp salt, ½ cup buttermilk, 1 tsp turmeric powder, 1 tsp jeera powder

    Steps to make Kothavarangai Vathal:

    1. Wash cluster beans very well. Bring water to boil in a deep pan.

    2. Add salt and cluster beans, let it cook for 4-5 minutes. Switch off the flame.

    3. Let it remain in water for another 10 minutes. Blanch the cluster beans and remove from water accordingly.

    4. Let the beans dry for 3-4 hours. After drying, take buttermilk; add salt, turmeric powder and jeera powder.

    5. Add dried cluster beans in buttermilk; mix well and let it dry in the sun.

    6. When it is dried completely(3-4 days), store them in an airtight container.

    Fry Kothavarangai Vathal in hot oil before serving.
