A lip smacking Lemon Jelly Roll is sure to appeal you and your friends at the party. The little tangy and sweet flavour of lemon jelly fills your mouth with sumptuous taste.

Ingredients to make Lemon Jelly Roll:

3 eggs, 2 cup sugar, 1 cup all purpose flour, 1 tsp baking powder, 1/4 tsp salt, 1/4 cup lemon juice, 3 tbsp flour for filling, 1 egg beaten for filling, 3/4 cup water

Steps to make Lemon Jelly Roll:

1. In a deep bowl beat eggs and gradually add cup sugar and beat well until frothy.

2. Stir in 2 tbsp cold water. Add all purpose flour, salt and baking powder; fold into egg mixture. Spread on a greased and lined baking tray.

3. Keep a thin layer of batter in tray so that the cake can be folded easily.

4. Bake it for 10-12 minutes or until cooked.

5. Invert the baaked cake onto a kitchen towel dusted with powdered sugar. Gently peel off foil paper. Roll up cake in the towel jelly-roll style, starting with a short side. Cool it completely after folding.

6. Meanwhile prepare lemon jelly filling. In a small saucepan, combine the sugar, flour, egg, water and lemon juice. Cook and stir over medium heat until mixture comes to a boil. Cook and stir for 1 minute or until thickened. Cool it completely.

7. Unroll the cake, spread filling and roll up again.

Serve the Lemon Jelly Roll fresh and enjoy.
