This is an appealing recipe that accompanies your roti or steamed rice. It has a tangy taste of tamarind and sweet taste of coconut that balances the flavor well. Its masala paste brings in a rich aroma and is appealing to the taste buds.

Ingredients to make Madras Onion Stew:
1 cup peeled shallots, ½ cup chopped onion, 1 tbs oil, ½ tsp mustard seeds, few curry leaves, 1/4 tsp asafoetida, 1 cup grated coconut, 1 tsp grated jaggery, 1 tsp tamarind pulp, salt to taste
To prepare the paste:
1 tbsp grated coconut, 1 tsp chili powder, 1 tbsp coriander powder,1 tsp chopped garlic, ½ tsp chopped ginger
1. Take a pan and heat some oil in it, add mustard seeds and then let them crackle. Add asafoetida and curry leaves.
2. Add shallots and chopped onion to this mixture and saute them on medium flame for 3-4 minutes.
3. Now add prepared paste in cooked onion and stir for 2-3 minutes.
4. Now add jaggery, tamarind, salt, and ½ cup of water and cook for 5 minutes stirring occassionally.
Serve hot with roti or rice.
