We have for you a delectable veggie dish called Mangalorean Tendli and Chana Masala, full of the goodness of vitamin A, carbohydrates, and protein.

1 cup sliced tendli, 1 cup boiled kala chana, 2 tbsp coriander seeds, 1 tsp cumin seeds, 3/4 tsp mustard seeds, ¼ tsp fenugreek seeds, ½ cup grated coconut, ¼ cup chopped onions, 1 tbsp chopped garlic, 1½ tbsp tamarind pulp, 1 tbsp oil, 6 curry leaves
1. Dry roast coriander seeds, cumin seeds, ¼ tsp mustard seeds, and fenugreek seeds on a medium flame for 2-3 minutes.
2. Once cooled, combine the roasted spices with coconut, onion, garlic, tamarind pulp and ½ cup of water and blend till smooth. Keep aside.
3. Heat oil, add ½ tsp mustard seeds and curry leaves and sauté for 30 seconds. Add tendli and sauté for 4 minutes.
4. Add the prepared coconut paste and sauté for 3 minutes.
5. Add the kala chana, salt and 1¼ cups of water, mix well, and cook on medium heat for 10 minutes, stirring occasionally. Serve hot.
