The Mango season is here and so are the Mango delicacies. Mango & Lemon bar is a sweet dish rich in vitamins and minerals.

1¾ cup all-purpose flour, 2/3 cup sugar, ½ tsp salt, 1 tsp finely grated lemon zest, 1 tsp vanilla essence, ¾ cup unsalted butter
For the Filling:
6 large eggs, 11⁄3 cups sugar, 11⁄3 cups mango puree, 1⁄3 cup freshly squeezed lemon juice, ½ cup all purpose flour
1. Preheat the oven. Combine flour, sugar, salt, lemon zest and vanilla essence in food processor and pulse.
2. Add cubes of cold butter. Press dough into the pan and bake for about 20 minutes.
3. Reduce the oven heat.
4. To make filling, combine eggs, sugar, mango and lemon juice in a large mixing bowl.
5. Sift flour over the top and then whisk to combine.
6. Pour over baked crust and then bake for 25-30 minutes.
