Carbohydrates provide the energy that fuels your little one's metabolism, supports growth, keeps his brain and nervous system working and maintains his overall health. It also helps your muscles to move, your nerves to work, and your kidneys to filter blood. Vitamin C helps to repair and regenerate tissues and protects against heart disease.

1 cup basmati rice, 1 tbsp oil, a few tej patta, 10gm cloves, black pepper and salt to taste, 1/2 tsp shah jeera, 1 onion chopped, 1 tomat chopped, 2 tbsp ginger garlic paste, 2 tsp lemon juice, coriander leaves and mint leaves for garnishing, 10 green cardamoms, cashews for garnishing, a pinch of saffron, 2 to 3 cinnamons, 1/4 tsp red chilli powder, 1 green chilli chopped, 1/4 tsp garam masala
1. Heat the oil and add the onion and saute till they get softened and transparent.
2. Add the mint leaves and green chilli and saute for 30 seconds.
3. Add the tomatoes and saute till the tomatoes become mushy.
4. Now add all the spice powders and salt and saute for a minute.
5. Add the rice and stir well so that the masala coats the rice. Saute for 2 to 3 minutes continuosly stirring the rice.
6. Lastly, add coriander leaves and mint leaves along with cashews and mix the whole rice or you can garnish the masala rice with the coriander leaves. The prep time is 5 minutes and the cooking time is 15 minutes. It serves 2 to 4 people.
You can serve the masala rice along with raita or with a veg salad, pickle or papad.
