Try this coconut based curry of drumstick which is popular in coastal Konkan region.Drumstick contains good amounts of many vital B- complex vitamins.

3 drumsticks, washed peeled and cut into 2 inch piece, 1 cup grated coconut, 3 roasted dry red chillies, small lemon size tamarind, 1 tsp. oil, 1 tsp. ghee, 6 garlic pods, salt to taste, water as required
1. Boil drumsticks in water just enough to cover them. Add salt to it.
2. Grind grated coconut, tamarind and red chillies with little water to a fine paste.
3. When the drumsticks are tender add the ground paste, stir well and bring to boil.
4. Reduce the flame and cook for 3 minutes. Adjust the consistency with water to achieve a medium thick gravy.
5. Heat oil and ghee in tadka pan and fry garlic pods till golden brown. Add it to the gravy and mix.
Serve Mashinga Saang Randayi for today’s lunch along with steamed rice and curd.
