Here is an innovative way of using the peels of the green peas into an amazing dish. The only trick is you have to remove the thick fibrous vein of the peapod. This is a good source of vitamin B6, niacin, choline, apart from the regular nutrients.

1 cup green pea pods, which is fresh and firm, 1 boiled and peeled potato cubes, 1 tbsp. oil, ½ tsp. cumin seeds, ¼ tsp. hing, 5 spring onion with bulbs and greens chopped, 1 tsp. finely minced ginger, 1 finely chopped green chilli, ½ tsp. red chili powder (optional), 1 tbsp. tomato paste, ¼ tsp. turmeric powder, ¼ tsp. garam masala, salt to taste.
1. Wash the peels of peas and remove the long fibrous membrane and chop each pea pod in the middle to bite size.
2. Heat oil in a pan and add cumin seeds when it begins to splutter add chopped white part of the spring onion and sauté for 2 minutes.
3. Then add the chopped peels of green pea pods, potatoes, greens of spring onion and stir. Add in turmeric powder, green chiles, ginger, tomato paste, and salt, and mix well and cover with the lid and cook over low-medium heat until they are tender and well cooked.
Serve it as a side dish with rotis, parathas.
