A striking combination of jaggery and peanuts in tur dal makes it more healthy and tasty and will become favourite in no time. The sweetness of jaggery and the texture provides by peanuts is something that you can't resist. It is loaded with antioxidants, proteins, and vitamin E.

1 cup tur dal, 1/4th cup tomatoes, 1/4 tsp asafoetida, ½ tsp mustard seeds, 1 tbsp skinned whole peanuts, 1 tbsp jaggery, salt to taste, ghee, coriander leaves for garnishing, turmeric powder, coriander powder
1. Wash the dal thoroughly and soak it in water for 10-15 minutes. Drain, rinse and transfer to a pressure cooker with 2.5 cups of water, the peanuts, turmeric powder, ½ tsp salt.
2. Pressure cook the dal on high flame till one whistle, then reduce flame and cook till the next whistle. Turn off the flame and let the pressure release naturally.
3. Meanwhile, prepare the tadka. Heat the ghee in a small pan, add to it mustard seeds, asafoetida. When the seeds strats crackling, add chopped tomatoes. Sprinkle some salt over tomatoes, cover and cook for 2-3 minutes.
4. Add 1tsp coriander powder and cook unitl tomatoes turn soft.
5. Open the lid of pressure cooker and add jaggery and mix well.
6. Blend the jaggery properly. When the tadka is done, pour the same over dal in cooker and mix well.
Garnish Meethi Dal with coriander leaves and serve it right away.
