Methi Rice with Coconut Milk

Fenugreek is also very low in calories, hence provides all the good nutritional benefits without fat. On the other hand, coconut milk is often considered to be a “miracle liquid” since the nutrition it offers helps to build up the body’s immune defenses and prevents diseases. Methi Rice with Coconut Milk is a mouth watering dish due to its taste and texture. The best part of it is that it takes only 30 minutes to cook.

Ingredients to make Methi Rice with Coconut Milk:

Basmati rice-1 cup, methi leaves-½ cup, green peas-1/4 cup, coconut milk-1 cup, water-1 cup, oil-1 tsb, coriander leaves-few and salt-to taste

Steps to make Methi Rice with Coconut Milk:

1. Rinse the methi leaves and coriander leaves in salt water for 10 minutes. Remove from the water and keep aside.

2. Soak the basmati rice for an hour or until you use it for pulao.

3. Heat oil and ghee in a pressure cooker and add the methi and coriander leaves to it. Fry till the leaves shrink and change its colour to dark green.

4. Then add peas and soaked the rice and mix once with the help of a spatula.

5. At this stage, add salt. Now add the hot water, coconut milk and mix once.

6. Close the lid of the pressure cooker and cook until 2 whistles.

After the pressure is released, take it out and serve hot.
