Basmati rice-1 cup, methi leaves-½ cup, green peas-1/4 cup, coconut milk-1 cup, water-1 cup, oil-1 tsb, coriander leaves-few and salt-to taste
1. Rinse the methi leaves and coriander leaves in salt water for 10 minutes. Remove from the water and keep aside.
2. Soak the basmati rice for an hour or until you use it for pulao.
3. Heat oil and ghee in a pressure cooker and add the methi and coriander leaves to it. Fry till the leaves shrink and change its colour to dark green.
4. Then add peas and soaked the rice and mix once with the help of a spatula.
5. At this stage, add salt. Now add the hot water, coconut milk and mix once.
6. Close the lid of the pressure cooker and cook until 2 whistles.
After the pressure is released, take it out and serve hot.
