This Mexican Paneer Nachos recipe is a perfect fun food, and is healthy too, as it is loaded with the goodness of calcium and protein from the paneer, and vitamins and minerals from the veggies.

1 cup Grated Paneer, 1 packet tortilla chips, 1 Cup shredded cheese, 1 Tomato diced, 1/4 Cup diced onion, Half a capsicum diced, 2 tbsp chopped coriander leaves
1. Preheat oven to 400 degrees F. Lightly oil a baking sheet.
2. Place tortilla chips in a single layer onto the prepared baking sheet.Top with grated Paneer and cheese.
3. Cover with more tortilla chips and add capsicum and cheese.
4. Place in oven and bake until heated through and the cheese melts, for about 5-6 minutes.
5. Serve immediately, topped with tomato, onion and coriander.
