Mexican Rajma Curry comes with the goodness of rajma, which is rich source of protein and fibers, cheese, which provides good fat, and capsicum containing a list of other nutritional benefits. With the goodness of urad dal rich in protein and fiber and methi leaves, this one is a delicious curry served hot with rice or chapati!

    Ingredients to make Mexican Rajma Curry:

    Urad dal-½ cup, rajma-1 cup, water-4 cups, kasuri methi-1/4 cup, butter-1 tsb, salt-to taste, oil-2 tsp, and garam masala-1/4 tsp

    Steps to make Mexican Rajma Curry:

    1. First, wash the rajma and urad dal. Keep aside.

    2. In a pressure cooker pan, h eat the oil and add rajma, urad dal, kasuri methi, g aram masala and salt. Give a gentle mix. Cook for 5 minutes on medium flame.

    3. Add water as per requirement and pressure cook till 4-5 whistles and wait till the pressure is released.

    4. Open the lid and add butter.

    Mix well and serve hot with rice or chapati.
