Microwaved Eggless Spongy Muffins:

Are you wondering about breakfast menu ? Soft Spongy Microwaved Eggless Muffins can be made in a microwave in a jiffy. They are packed with dry fruits nutrients like Thiamine , Niacin, vitamin B6, folate, manganese, dietary fiber, vitamin A, vitamin C, vitamin K, potassium and phosphorus.

Ingredients to make Microwaved Eggless Spongy Muffins:
1 cups whole wheat flour, ½ cup of finely chopped walnuts, dates, almonds, pista, golden raisins, ¼ tsp cardamom powder, 3 tbsp sugar, ½ cup milk, 3 tbsp butter, 1 tsp baking powder, 2 drops vanilla essence, a pinch of salt, 10 microwavable muffin moulds.
Steps to make Microwaved Eggless Spongy Muffins:
1. Sift the flour, salt and baking powder.
2. Mix butter and sugar well, add milk, flour and mix well. Add the dry fruits and vanilla. The batter should be thicker than pancake batter but looser than cookie dough. Only then you will get even muffins.
3. In a tablespoon fill the muffin moulds with batter and microwave for 2 minutes.
4. Turn around again and bake another 2 minutes, turn around and bake for 1 minute.
5. Check with a toothpick whether the muffins are baked.
6. Let them stand for 5 minutes and then take it from the oven.
Bake them for today’s breakfast and enrich with the multi dry fruits.
