Mint leaves are a good source of protein as well as vitamin and minerals like vitamin A and C, iron and calcium. Rice which has carbohydrates when flavoured with mint and lemon juice, results in an easy, healthy and flavoured pulao called Minty Pulao.

Contents
½ cup rice, ¼ cup fresh mint, ¼ cup onion, ½ tsp lemon juice, 1 tsp oil, salt as required, 1 cup water
1. Wash the rice well. In a pressure pan, put ½ tsp oil. Add the rice, water and pressure cook for 2 whistles. Cool the rice.
2. Boil mint leaves in 2 tbsp water and puree the mint. In a pan, put ½ tsp oil and saute finely chopped onion for 2 minutes. Add the mint puree, salt and give a good stir for 2 minutes on medium flame. Switch off the flame.
3. Add the cooled rice and lemon juice to the mint onion mixture and give a gentle mix till the rice gets well coated with mint puree.
Minty Pulao is ready to be relished. Enjoy!
