Navrathan Sabzi is a recipe of vegetables which has numerous minerals, vitamins as well as fibre.

4 cups chopped vegetables (peas, green beans, green bell pepper, carrots, broccoli, potato), chopped and boiled, 2 tablespoons ghee, ½ teaspoon cumin seeds, 2 onions chopped, 4 cloves garlic chopped, 2 inch ginger chopped, 1 tomato chopped, 1 teaspoon salt, 1 teaspoon coriander powder, ½ teaspoon turmeric, ½ teaspoon garam masala, ½ cup cashews, 1 ½ cup water
1. Heat ghee and add cumin. Once they turn brown, add the onions. Stir-fry until onions are soft.
2. Add garlic, ginger, tomato and spices. Stir-fry for a minute, and add the cashews. Stir-fry for 8-10 minutes.
3. Let this cool and then puree in a blender along with 1 ½ cups of water.
4. Pour the blended curry back into the pot over low heat, then add the boiled vegetables. Simmer for 2-3 minutes and serve with rice or roti.
