Onions are rich in vitamins A, B6, B complex, and C, as well as iron, folate, and potassium. They are also excellent sources of antioxidants. Lemon provides vitamin C and rice is a good source of carbohydrates. Onion Lemon Rice is a healthy and tasty blend of all the three ingredients and super easy to cook and consumes less time.

1 cup, onion-1 small, oil-1 tbsp, salt -to taste , mustard seeds-1/4 tsb, lemon-1 tablespoon , turmeric powder-1 pinch and Ginger garlic paste- 1 tsp.
1. Heat oil in a colander and add mustard seeds. Let it splutter.
2. Add chopped onions to it and fry till it becomes brownish in appearance.
3. Add turmeric powder, ginger-garlic paste and salt. Stir well for 2 minutes.
4. Add cooked rice to it and fry for 5 minutes.
5. Add lemon juice according to taste and fry for next 5-7 minutes.
Serve hot.
