Open Sandwich is a yummy breakfast. You can slice any vegetable of your choice and place it on the bread. A variety of vegetables will give a good colour to the sandwich. If you are running short of vegetables, you can make the sandwich with a single vegetable like potato. Potatoes are good source of starch and vitamins and cheese is full of proteins. So this is a filling snack.

2 slices bread (whole wheat), 2 potatoes cubed, 1 teaspoon butter, grated cheese, 1 onion finely chopped, salt to taste
1. Cut out the edges of the two bread slices.
2. In a pan, heat a teaspoon of butter. Once it melts, place the bread slices and toast evenly on both sides.
3. Once the bread is warm , sprinkle cheese so that the cheese melts. Now add the onions and potatoes.
4. Do this for all the slices and toast the bread well.
Open Sandwich is ready. You can serve with sauce. It will vanish into your tummy in a jiffy.
