Oranges are rich in vitamin C. Flavour this citrus fruit with thyme, which is a good source of vitamin C, A, fibre and minerals like iron, copper and manganese. Using both these ingredients, you can prepare delicious and healthy orange thyme jam

8 sweet oranges, ¼ cup orange juice, 1 tbsp orange zest, 2 sprigs of thyme, 1 tbsp, 1 cup sugar, a pinch of salt, ½ lemon juice
1. Peel the oranges and remove its segments.
2. In a large vessel, put the orange segments, orange juice, sugar and lemon juice. Over medium heat, bring the entire mixture to a low boil and then add salt.
3. Simmer for about half an hour and then add orange zest and thyme.
4. Continue cooking till the mixture turns thick. This process takes time. You can add more sugar to thicken the jam.
5. Switch off the flame and allow the orange thyme jam to cool down.
6. Fill the jam in clean dry jars and refrigerate.
Orange thyme jam is ready to be served with phulkas or toast.
