1 bunch spinach chopped, 3 garlic cloves, ½ tsp cumin seeds, 1 tsp mustard seed paste, salt to taste, ½ tsp turmeric powder, 1 tsp panch phutan (mustard, cumin, fenugreek, nigella, and fennel seeds), 2 tbsp oil, 1 onion sliced, 1 tomato sliced, 1 brinjal cubed, ½ cup radish slices, 1 cup cauliflower florets, 1 potato cubed
1. Heat a tablespoon of oil and shallow fry all vegetables except brinjal, tomatoes, and spinach for 2-3 minutes.
2. Add mustard paste and sauté for 1 minute. Add 1 cup of water, salt and turmeric powder.
3. Once the curry starts boiling, add the brinjals. Cover and simmer for 4-5 minutes.
4. Add the chopped spinach and tomatoes. Simmer for 4-5 mins till the spinach is cooked.
5. Heat oil in another pan. Add panch phutan. Once it crackles, add the red onions. Sauté till soft.
6. Add this tempering to the curry and mix well. Serve hot with rice.
