This is an easy and healthy recipe made with cottage cheese. It is an excellent source of protein. Paneer is also rich in calcium and phosphorus, so it helps in healthy development of bones and teeth. It is low in lactose so it is easily digestible by developing digestive system.

4 whole wheat bread slices, 1 cup mashed paneer, 1 onion, 1 tomato, ½ medium sized cucumber,1 boiled potato, handful of coriander leaves, salt to taste, ½ tsp black pepper, ½ tsp chat masala(optional)
1. Chop the onion, tomato and cucumber. Mash the boiled potato and crumble the paneer well.
2. In a large mixing bowl, add the chopped veggies, potato and paneer. Add salt, pepper and chat masala. Mix it well.
3. Apply butter on one side of the bread.
4. Spread the mixture on the other bread.
5. Preheat the toaster and melt some butter in the toaster.
6. Place your bread in it and toast it until it gets crispy.
Cut it into two pieces and serve it along with tomato ketchup.
