Patrodu is a snack prepared in Himachal Pradesh, from gramflour coated and steamed leaves of colacasia. Kachalu ke patte are leaves locally available, and a good appetizer. It has a high content of iron and calcium and is very nutritious.

Ingredients to make Patrodu:

1 cup besan / gram flour, 5-6 Patrodu leaves/kachalu ke patte, 1 teaspoon mustard seeds, 2 teaspoons sesame seeds, 1 tablespoon oil, salt, 4 green chillies, 1 piece garlic, 2 medium sized onion, few basil leaves / bhavri leaves

Steps to make Patrodu:

1. In a bow make paste of black gram flour of pouring consistency with water.

2. In a mixer jar, take few leaves of bhavri/type of basil, onion, garlic, green chilies, and salt. Add this paste to the dough of besan.

3. Take one leaf keeping lower side upwards and apply the dough over it. Cover it with another leaf in reverse manner and fold the sides of the leaves inside and roll them. Apply paste on all sides of roll while folding. Wrap with leaf and tie with thread.

4. Take big pan, add water and bring to boil. Place the folded leaves on a pan or bowl over water. Steam for 25 minutes.

5. Take the leaves out ad allow it to cool and cut them into small pieces.

6. Shallow fry the pieces with little oil, sesame seeds and mustard seeds.

Patrodu is ready to be served.
